Ingredients

  • 2 Roma Tomatoes, Chopped
  • 1/4 Cup Onion Chopped Fine
  • 1 Bunch Curly Parsley Chopped Fine
  • 1 Clove Garlic Mined
  • 1/2 Teaspoon Oregano
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 4 Ounces Crumbled Feta Cheese
  • 2 Avocado Chopped in Chunks
  • Salt & Pepper to taste

Instructions

    In a bowl, combine all the ingredients except the avocados.

    Stir to combine.

    Cover and refrigerate for several hours (or overnights if you prefer)

    Just before serving, add chopped avocado. Serve with Tortilla Chips, Pita Chips, Baguette or Crackers.

    This recipe can be made and served immediately. However, it does taste better if left to sit for a few hours.
